Common goal is the promotion and training of young talent

At a recent review of our Bailliage concerns were raised over the generally high age of members and the Chaîne’s relatively low level of prominence especially in the hospitality sector. Accordingly it was decided to devote much effort at national level to address these issues.

Paying the membership fees for young people who work in a Professional member establishment was one solution given that it was in line with the Chaîne’s recommendation to showcase young talent.

Another worthwhile resolution was to form a partnership with the Association of Austrian Chefs (German: Der Verband der Köche Österreichs). The VKÖ is a founder member of the World Association of Chefs Societies.

Young members attract other young people and our partnership with the Chefs’ Association will ensure an increased exposure of the Chaîne among Professional chefs and apprentices alike.

Accordingly, we are sponsoring the Chefs’ Association’s “Duell der Jungköche 2017” (lit. Duel of the Young Chefs 2017). A Bailliage Professional member will be on the panel of judges. The national champion resulting from the competition will receive the “Chaîne des Rôtisseurs Bailliage of Austria Prize”.

We believe that supporting this national culinary competition is an investment for the future of the Chaîne in Austria as the “duel” receives much publicity in the country thus bringing the desired increased exposure of the Chaîne des Rôtisseurs and its logo.

At the 2016 Culinary Olympics held in Erfurt, Germany, the Austrian team won two Golds and a Bronze medal in the “Hot Kitchen” section. Austria has thus reached the world top of gastronomy.

The common goal of the National Bailliage and the Association of Austrian Chefs is now the promotion and training of young talent for the Culinary World Championships in 2018 in Luxembourg and for the Culinary Olympics in 2020.
